Healthy Chicken Vegetable Penne



I was first introduced to this recipe by Stoffer's. I had just picked my daughter up from school, she was hungry and I hadn't even started dinner! Tisk, tisk. The closest thing to us to a grocery store was Walgreens. We headed into Walgreens determined to find something edible and healthy. To the freezer section! There were many choices but the reason I was attracted to this dish was obvious......zucchini. My daughter was skeptical. She hadn't yet discovered the delicate flavor of a cooked zucchini. One bite and we were hooked! Although the package should be enough for two, my daughter is um "growing" and tends to eat larger portions. That coupled with the fact that I like to take store bought meals and make them home made inspired me to recreate this dish.

My first attempts were very successful but they were missing the cheese sauce. I tried Ragu Parmasean sauce and was disappointed at the flavor of the sauce. After re-examining the Stoffer's package I noted the ingredients in their cheese sauce:  parmasean and asiago. I was lucky to find a nice parmasean, asiago, romano blend at the grocery store for $3.99. I made a Bechamel sauce, added the cheeses and voila! 

CHICKEN VEGETABLE PENNE
My Re-creation

1 cup cooked seasoned chicken (diced)
1 1/2 cups penne pasta
1/2 cup red bell pepper (chopped)
1/2 cup yellow bell pepper (chopped)
1 zucchini cut into small slices
2 cloves minced garlic
1/2 cup parmasean, asiago, romano cheeses
2 tablespoons butter
2 tablespoons flower
2 cups milk
salt and pepper

Bechamel
Melt butter over medium heat. Add flour and stir until blended. Whisk in milk. Cook for at least a minute. Heat through. Add a sprinkle of salt and a sprinkle of pepper. Add cheese and continue to stir until incorporated. Simmer for about 15 minutes.

Pour enough of the sauce over the chicken and vegetables to coat and moisten the dish.. Gently toss. Serve warm.

Rock Bottom


I used to wonder what made people decide to start their fitness journey. Was there a "rock bottom" moment glancing in the mirror and not recognizing the person in the reflection? Did they happen to catch an infomercial with a high energy motivational speaker giving out his secrets to success? Was it a hospital visit, dating, or a career? I just couldn't figure it out until I realized every one of those things has happened to me and none of them ever panned out to a successful run. I would workout for six days and fall right back into old habits of eating bad and sitting marathons. What worked for me wasn't any great epiphany. It was as simple as this:

"Do you want to be fat? No. Then you know what you have to do."

I was sitting on the couch, I got up, popped in a video and got to work. The first workout was brutal. I was sweating, panting and fighting the urge to sit down. The whole time I kept saying to myself, "I don't want to be fat". That worked for me. I was able to stay motivated by the simple fact that I didn't want to be fat. It still works for me today.

My Diet App

       Reducing your caloric intake is a key component of weight loss. Calorie counting apps are a great way to keep track of your calories. The app I use was created by MedHelp. Its a cute little calorie tracker. I am able to input my meals, exercise and water intake. The food database consists of food items from the grocery store to popular food chains. This app also has a feature that allows the user to input their current weight, goal weight, activity level and target date. The system then calculates a daily calorie budget. The budget increases when the user loses weight. If the user gains weight or the weight stays the same, the calorie budget decreases. Exercising also increases the calorie budget significantly. I lost 3 pounds within the first week using this app. So far, this is the easiest way for me to keep track of my calories. This app is free and available for iPhone and Android.
